Mediterranean pasta

Mediterranean pasta 

Ingredients: 

1 package of vesuvio pasta 

1 red pepper

1 orange pepper 

1 yellow pepper

1/2 sweet onion 

1 bunch parsley 

1 block feta cheese 

Cracked pepper to taste 

3/4 cup olive oil 

1 container of pitted kalamata olives 

Directions: 

  1. Chop peppers 

  2. Chop onion 

  3. Cut feta cheese into small squares

  4. Chop parsley 

  5. In a large skillet, heat 3/4 cup of oil 

  6. Add 3 cloves of garlic. Sauté. Keep the heat low so you don’t burn garlic.

  7. Add peppers and onions 

  8. Use juice from container and add to skillet. Add your olives

  9. Heat until flavors combine and peppers are soft ( about 5 minutes or so) 

  10. In separate pot, cook your pasta. Save a  1/2 cup of starchy water

  11. Place pasta in serving bowl with starchy water. Add pepper and olive mixture. Toss in your cheese and parsley.
